Abstract:
PURPOSE: To obtain a soup stock having high preservability and not permitting the multiplication of microorganisms and the generation of less over two weeks even at ordinary temperature.
CONSTITUTION: An alcohol with or without a salt is added to a soup stock to provide a soup stock high in preservability and not permitting the multiplication of microorganisms and the generation of lees over two weeks even at ordinary temperature.
