Abstract:

PURPOSE: Particles of fish eggs are combined with an edible protein and other materials and they are formed into spawn lumps, a coating film of pectin solution or the like is formed thereon and coagulated with a calcium chloride solution or the like, thus restoring separated particles of fish eggs to the state just like natural spawn lumps.

CONSTITUTION: Strictly selected particles of fish eggs are mixed with a generally used tackifier such as various kinds of gum, a binder such as gelatin or, according to the application purpose, heat-coagulable protein such as soybean protein or poly- saccharide such as starch and the mixture is formed with a forming device. When necessary, the formed fish eggs are frozen to prevent the deformation and all the surfaces are coated with a solution of sodium alginate or the like. While the solution remains on the surfaces, the formed eggs are dipped in a solution of calcium chloride or acid to coagulate the coating film. After they are washed with water to remove the coagulation solution, the formed eggs are frozen one overnight. Then, they are stood at normal temperature or forcibly thawed to dehydrate the surface film, thereby forming the thin and strong films and giving spawn lumps closely similar to natural spawn lumps.
