Abstract:

PURPOSE: To obtain inexpensively bean curd having a good flavor, by blending sterilized soybean milk cooled to < a freezing temperature with sterilized bittern cooled to < the freezing point of the bean curd in a conduit just before packing, packing the blended solution into a container having gas barrier properties, putting a cover on it, and heating it so that the blended solution is coagulated.

CONSTITUTION: Soybean milk is sterilized under heating, the sterilized soybean milk is cooled to < a freezing point, the soybean milk is blended with bittern, which is sterilized under heating and then cooled to < the freezing temperature of the soybean milk, in a conduit just before packing. The blended solution is packed into a container having gas barrier properties in a sterilized chamber, a cover having gas barrier properties is put on the packed container, and the container is sealed. The sealed container is heated, so the blended solution in the container is coagulated, to give sterilized bean curd. Since inexpensive bittern is used as a coagulant, bean curd which is more inexpensive than one produced by an existing method and has a good flavor can be produced, and sterilization can be carried out more inexpensively by heating.
