PURPOSE: To produce stock-like seasoning in manufacturing stock from the sources of aquatic products such as dried bonito, dried Auxis thazard and dried flying fish, by removing a palatable component as residue without effectively using the component, not treating the residue as industrial waste and efficiently utilizing the sources of aquatic products.
CONSTITUTION: 100% sources of aquatic products represented by dried bonito, dried Auxis thazard and dried flying fish are decomposed with 100-500% mixed solution of protease and a highly concentrated enzyme solution extracted from soy sauce KOJI at 30-60°C and filtered to give stock-like seasoning. The prepared stock-like seasoning has no bitterness, stronger flavor and higher fragrance in comparison with seasoning digested only with an enzyme agent and this method causes an extremely smaller amount of residue than a conventional method of production.
