Abstract:

To obtain sugars from a cereal flour material in high separation efficiency and yield by treating a cereal flour material with a transglutaminase and then with a starch liquefying enzyme and a starch saccharifying enzyme and separating and recovering the produced sugars from proteins.

Cereal flour material such as wheat flour is treated with a transglutaminase and then with a starch liquefying enzyme, the obtained liquefied liquid containing oligosaccharides is separated and treated with a starch saccharifying enzyme, the saccharified liquid containing monosaccharide is separated and the sugars are separated and recovered from proteins at 70-100°C and pH 7 or below. The objective sugar such as glucose can be produced from cereal flour material in high separation efficiency and high total yield of each separation component while suppressing the amount of water necessary for washing, etc. The process is also effective for the separation and production of starch and proteins such as gluten in addition to sugars.
