Abstract:
PURPOSE:To obtain the titled suspension free from rough feeling to the tongue and malodor, by finely crushing a water-insoluble protein in wet state, spray- drying the protein to remove water and malodor and suspending in a liquid. CONSTITUTION:A water-insoluble protein preferably originated from soybean or fish meat is wet with water and finely pulverized with high-pressure homogenizer, etc. The obtained fine powder is dried with a spray dryer to obtain powder free from water and malodor. The objective suspension suitable as a drink can be prepared by suspending the powder in a liquid.
