Abstract:

PURPOSE: To obtain the title low-viscosity milk stable in terms of tissue, little in viscosity increase with time even if stored for a long period in a container filled state, also causing no fat separation or sugar precipitation by adding α-lactose to concentrated milk when a sterilized and concentrated regulated milk is to be crystallized under cooling.

CONSTITUTION: Regulated milk is homogenized, sterilized and then concentrated. When the resultant milk is to be crystallized under cooling, α-lactose is added to this concentrated milk. The amount of the α-lactose to be added is ca.0.01-0.2wt.% based on said concentrated milk. This α-lactose may be either α-anhydrous lactose or α-hydrous lactose, the former being preferable.
