Abstract:
PROBLEM TO BE SOLVED: To provide a method for efficiently producing milky-white tasty sea food stocks free of bitterness or offensive odor by separating the stocks from fish or shellfish at an extremely reduced running cost.
SOLUTION: This method fractionates the extract of fish or shellfish treated with a protein-hydrolyzing enzyme, by a pseudo-moving bed type chromatography packed with octadecyl silica adsorbent resin using a 10% aqueous solution of ethanol as the solvent, and powdering these fractions, to produce the tasty sea food extract containing sodium glutamate as a free amino acid at 8,000 wt.ppm or more and sodium inosinate as a nucleic acid at 30,000 wt.ppm or more.
