Abstract:
PURPOSE: To readily produce minced fish of young yellow tail which has been unable to be easily produced conventionally.
CONSTITUTION: A minced fish raw material is obtained from young yellow tail, immersed in an immersion solution and baked to give minced fish. The immersion solution has 0.5-10% acidity and 3.0-20% salt content.
