Abstract:

To provide a process for producing Tofu (bean curd) having fine and smooth texture, free from pore and keeping the deliciousness of soybean.

A soya milk emulsifying process is provided after a soya milk squeezing process in conventional Tofu production process. An emulsifying apparatus is used in the soya milk emulsifying process.
