Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing a transglutaminase derived from Bacillus subtilis in an active form by using a microbe belonging to the genus Escherichia.
SOLUTION: A microbe belonging to the genus Escherichia having a DNA fragment of a transglutaminase gene derived from the microbe belonging to the genus Bacillus is cultivated, and the expression of the transglutaminase gene is induced in the period from the time deteriorating the logarithmic propagation of the microbes to the time reaching stationary phase of the growth of the microbes. The transglutaminase is accumulated in the microbes belonging to the genus Escherichia.
