PURPOSE: To obtain a vinegar with its quality stably and favorably retained, by adsorption treatment, with a specific activated carbon, of a vinegar raw material before, during or after fermentation to free the final product lots from sensuous quality variation.
CONSTITUTION: A vinegar raw material is put to adsorption treatment using an activated carbon ≤10 in mean pore size before, during or after fermentation. According to this process, a vinegar of great favorite can be obtained even with shortened aging period (e.g., ca. one week). For said vinegar raw material, any of conventional ones can be used; a fruit (esp. tomato) being preferable. The amount of the adsorbent to be used is ca. 0.01-2wt.% based on the total weight of the vinegar raw material.
