Abstract:

PURPOSE: To produce a vinegar drink containing Houttuynia cordata Thumb. and nutrients of egg.
CONSTITUTION: This producing method a vinegar drink consists of a process for washing collected Houttuynia cordata Thumb. with water, sterilizing with a solution of processed vinegar, cutting Houttuynia cordata into several cm, immersing in vinegar of rice and preserving Houttuynia cordata at about -10°C, a process for mixing Houttuynia cordata with vinegar of rice sterilized at about 110°C, aging Houttuynia cordata at about 110°C, cooling to about 30°C, repeating these aging and cooling for several times, pressing precipitated Houttuynia cordata, filtering the solution from which Houttuynia cordata is removed to give vinegar of Houttuynia cordata, a process for putting half-boiled eggs in the vinegar of Houttuynia cordata, heating to about 45°C to dissolve eggshell, taking out the remaining eggs, removing thin skin, returning the eggs to the original vinegar of Houttuynia cordata again and blending to give egg vinegar of Houttuynia cordata with egg treated and a sterilizing process for sterilizing the vinegar of Houttuynia cordata with egg at about 50°C under stirring, forcedly cooling to about 5°C after the sterilization, removing the precipitate, filtering the vinegar of Houttuynia with egg, further adding a sweetener, sterilizing at about 50°C under stirring and focedly cooling to about 5°C.
