Abstract:

PURPOSE: To produce vinegar stabilized in quality, preventing precipitation and reducing discoloration, by subjecting acetic fermentation mixture to ultrafiltration immediately after completion of the fermentation.

CONSTITUTION: When vinegar is produced by a usual process, the acetic fermentation mixture is filtered through a membrane for ultrafiltration, immediately after the fermentation is completed. Preferably, a seed vinegar is added before the fermentation and the starting mixture is subjected to ultrafiltration, then the acetic fermentation is conducted on the filtrate. Further, the fermentation mixture is subjected to ultrafiltration, immediately after completion.
