PURPOSE: The feed rate of the starting alcohol is calculated so that the alcohol concentration in the fermentation mesh is adjusted to a desired one and the feed rate is controlled on the basis of the calculation to increase the productivity of vinegar manufacturing.
CONSTITUTION: In acetic fermentation, an automatic alcohol-measuring unit 3 for determining the alcohol concentration in the fermentation mash, an alcohol feeder 5, and a controlling computer 24 are electrically connected. Alcohol concentration is measured by the device 3 intermittently in accordance with signals from the computer 24 and the output is input into the computer. While this cycle is repeated, the feed rate of the starting alcohol is calculated so that the alcohol concentration in the mash is adjusted to the desired one on the basis of both alcohol consumption rate and the difference between the real alcohol concentration in the mash and the desired concentration and the result is transmitted to the device 15 to control the flow rate.
