Abstract:
PURPOSE: To easily produce a stable amylaceous product with only controlled hydrolysis and without any chemical treatment by gelatinizing a native wax-like amylaceous product and hydrolyzing the gelatinized product with β-amylase.
CONSTITUTION: This amylaceous product is obtained by gelatinizing a native wax-like amylaceous product and hydrolyzing the gelatinized product with β-amylase. The wax-like amylaceous products are powders or starches of amylaceous products or their mixtures such as cereals, which being rich in amylopectin. The gelatinization step can be carried out by thermally treating an aq. suspension contg. 5-30 wt.% of the amylaceous product at the temp. of 65-70°C for 8-12 minutes. Hydrolysis must be carried out by using pure β-amylase. The reason therefor is that undesirable decrease in viscosity of the obtained starch is resulted if α-amylase is present during hydrolysis.
