Abstract:

PURPOSE: To impregnate a wetting agent into core part in a short time uniformly and to obtain the titled fruit having long-time wetting properties, flexibility, improved storage stability and transportation properties, by impregnating dried fruit with the wetting agent, treating under reduced pressure and, if necessary, centrifuging.

CONSTITUTION: Dried fruit such as grape, cherry, Japanese plum, apricot, etc., as a starting raw material is immersed in ≥70wt% solution of one or more wetting agents selected from glycerin, sorbitol, propylene glycol, etc., at 70W80°C for 2W8min while stirring and taken out. The fruit, for example, is put in a container such as an opened bag made of plastic having heat resistance and about 80μ thickness, tray, etc., treated at reduced pressure of ≥60mmHg pressure for 8W10min, impregnated with the wetting agent and optionally centrifuged.
