Abstract:

PURPOSE: Cream containing a specific amount of a fat with SFC characteristics in a specific range and a specific emulsifier is continuously whipped to give the titled cream which keeps good properties to make decorative flowers even when it is kept at lower temperatures for a long period of time.

CONSTITUTION: The objective cream is obtained by continuously shipping a cream which is composed of 15W70% of a fat and oil having following SFC properties: 55W98%, preferably 60W95%; 45W98%, preferably 50W95% at 15C; and SFC difference between at 5°C and 15°C is less than 205, preferably less than 15% and of 0W0.3%, preferably 0W0.2% of an emulsifier and contains less than 40mg%, preferably less than 30mg% of Ca in the composition.
