Abstract:

PURPOSE: To produce uniformly gelatinized white source having a smooth texture and useful for gratin, stew, etc., by blowing steam into a raw material liquid of white source and heating it while applying ultrasonic waves thereto.
CONSTITUTION: While applying ultrasonic waves of 10 to 100kHz, preferably 20 to 50kHz frequency to a raw material liquid of white source, steam of about 1 to 5kg/cm2 is blown into it and the raw material liquid is heated. Steam is prevented from blowing through and grain flour can be uniformly gelatinized. Accordingly, white source having a smooth texture free from rough touch can be obtained.
