Abstract:

PURPOSE: To provide a food/beverage rich in isopanose (6-O-α-maltosyl-glucose), 62-O-α-maltosyl-maltose or a branched oligosaccharide consisting chiefly thereof.

CONSTITUTION: Neopullulanase (e.g. derived from Bacillus stearothermophilus TRS40) is allowed to act, by conventional method, on a substrate such as starch, pullulan, dextrin, thick malt syrup or maltooligosaccharide to produce an aimed oligosaccharide. The objective food/beverage is rich in this oligosaccharide. The concentration of the substrate is ≥5wt.%, where a combination of α-amylase and neopullulanase is used.
