Abstract:

PURPOSE: To obtain a roll-in oil and fat composition containing proteaze capable of providing soft puff pastry having good float and crispiness without impairing dough in operation.

CONSTITUTION: A heat resistant proteaze is added to total roll in oil and fat composition at an amount of 10-1000 ppm (preferably 30-150 ppm) to provide the objective composition. The composition, preferably of 30-70 pts.wt. based on 100 pts.wt. powder is put in dough, folded, rolled, formed and as necessary fermented and baked to provide puff pastry.
