To elucidate at genetic levels a protein enhancing temperature tolerance, to obtain a microorganism having high temperature tolerance and capable of efficiently producing acetic acid, and to provide a method for efficiently producing vinegar using the microorganism.
A protein HTPG represented by the protein(A) or (B) described below is provided. The DNA of a gene encoding the protein HTPG is also provided. The protein(A) is a protein comprising a specific amino acid sequence. The protein(B) comprises an amino acid sequence in which one or several amino acids are substituted, deleted, inserted, added or inverted in the above specific amino acid sequence and has the function of enhancing temperature tolerance. The microorganism having high temperature tolerance is such that the number of copies of the DNA is amplified in the cell. The method for producing vinegar comprises culturing in an alcohol-containing medium a microorganism having the ability to oxidize alcohol among the above-mentioned microorganisms to produce and accumulate acetic acid in the medium.
