PURPOSE: To prepare powder of acetic acid-containing seasoning liquid having excellent storage stability and blocking resistance, in high yield of acetic acid, by mixing an acetic acid-containing seasoning liquid with a pulverization base composed of dextrin having a specific polymerization degree, and spray-drying the mixture at low temperature.
CONSTITUTION: A pulverization base composed of dextrin obtained by the hydrolysis of starch consisting of amilopectin with α-amylase and pref. having an average polymerization degree of 8W15, or a pulverization base composed of dextrin prepared by the above hydrolysis and having an average polymerization degree of 7W70, pref. 8W50 and a dextrin obtained by the hydrolysis of cyclodextrin and/or starch and having an average polymerization degree of 5W17, is added to a seasoning liquid containing acetic acid, and the mixture is spray- dried at a temperature as low as possible. The amount of the pulverization base is ≥70% of the water-content of the seasoning liquid.
