To provide a pure water making apparatus for the production of beverage and foods which achieves more economical and stable operation by having the function of efficiently carrying out hot-water disinfection of water paths of the pure water making device as a whole.

The pure water making apparatus 20 which makes pure water used for the production of the beverage and foods from raw water is provided with a water treatment unit 30 and a hot water supply unit 50. The water treatment unit 30 has a plurality of water treatment equipment for removing impure substances contained in the raw water and a plurality of hot-water disinfection paths which divide the water paths containing those of the water treatment equipment of the water treatment unit for hot-water disinfection. The hot water supply unit 50 is provided with a water heater 51 for heating the water for hot-water disinfection, a plurality of water selector valves 54-1 to 54-3 for hot-water disinfection which are used for supplying the water for hot water disinfection of different qualities to the water heater 51 and hot-water supply piping 53 for supplying the hot water to the plurality of hot-water disinfection paths from the water heater 51.
