PURPOSE: To obtain a saccharide liquid of high pure saccharide ratio at a high recovery ratio by adding a hydroxide of an alkaline earth metal to an oligosaccharide reactional solution, then adding an acid thereto and filtering the prepared mixture in a produced state of insoluble metallic salts.
CONSTITUTION: A yeast capable of specifically assimilating a reducing sugar formed as a by-product in a system in which saccharides are reacted with a sugar transferase to produce an oligosaccharide is added to the system and reacted therewith. A hydroxide of an alkaline earth metal (preferably calcium hydroxide) is added to the resultant oligosaccharide reactional solution and an acid (e.g. gaseous carbon dioxide or phosphoric acid) is then added thereto The prepared mixture in a produced state of insoluble metallic salts is filtered. The filterability is improved to afford a filtrate having high clarity.
