Abstract:

PROBLEM TO BE SOLVED: To efficiently purify phytic acid useful as a chelating agent, an antioxidant, etc., for foods with a small amount of a waste liquor by making a solution containing the phytic acid absorbed on an anion exchange resin, then eluting the adsorbed phytic acid with an acid or a neutral salt and desalting the eluted phytic acid according to the electrodialysis.
SOLUTION: Water is added to defatted soybeans to recover soluble ingredients and hydrochloric acid is subsequently added thereto to regulate the pH to 4.5. Proteinic ingredients are precipitated and removed to provide a supernatant (a soybean whey), which is used as a crude phytic acid extracting solution. Sodium hydroxide is then added to the soybean whey to regulate the pH of the crude phytic acid extracting solution to 8. A polymeric flocculant is subsequently added and centrifugation is carried out to recover a precipitate rich in the phytic acid. The precipitated phytic acid is then suspended in water and hydrochloric acid is added to redissolve the phytic acid to recover the supernatant containing the phytic acid. The resultant supernatant is subsequently passed through an anion exchange resin column to make the phytic acid adsorbed thereon. The adsorbed phytic acid is then eluted with an acid or a neutral salt and the prepared eluate is desalted according to the electrodialysis to efficiently purify the objective phytic acid.
