Abstract:

PROBLEM TO BE SOLVED: To purify a raffinose solution as an enterobacterium growth factor useful in the food area, etc., by decomposing kestoses contained in the raffinose solution with an inulin decomposition enzyme and by holding raffinose intact.
SOLUTION: A purified inulin decomposition enzyme derived from Streptomyces rochei, a substance containing the enzyme such as crude inulin decomposition enzyme, microbial cells capable of producing the enzyme or a cultured fluid from the cells and/or treatment product therefrom is made to act on a raffinose solution such as juice produced from the beet sugar manufacturing process to selectively decompose kestoses contained in the solution (e.g. fructosyl sucrose) along with holding the raffinose intact to improve the purity and yield of the raffinose, thus accomplishing the objective efficient purification of the raffinose solution as an enterobacterium growth factor useful in the food area, etc.
