Abstract:

To provide a composition stable, biologically applicable, physiologically acceptable, and comprising a practical source for pyruvate.

A method for producing an antioxidant composition comprises steps of: (a) crushing tissue from plants of the genus Allium and incubating the tissue at a temperature less than about 30°C; (b) neutralizing the crushed tissue with an alkaline hydroxide or an alkali-earth hydroxide; (c) drying the tissue; (d) grinding the tissue; (e) extracting the tissue with ethanol; and (f) evaporating the ethanol to recover a solid residue comprising pyruvate.
