Abstract:

To obtain a quality improver for a premix capable of producing a cooked food, good in flavor and texture such as moderate softness, meltability in a mouth and moist feeling by including a defatted egg yolk powder therein.

This quality improver for a premix comprises a defatted egg yolk powder, prepared by adding, e.g. 50-200 pts.wt. solvent such as ethanol to 10 pts.wt. egg yolk, extracting and defatting the egg yolk at 10-60°C and having ≤10 wt.% lipid content. The amount of the quality improver for the premix is used in an amount of preferably 0.1-2 wt.%, based on the total amount of the prmix and expressed in terms of the defatted egg yolk powder.
