Abstract:

To provide a sweetening with a high degree of sweetness, having lower energy than saccharose, having a good quality of taste close to that so saccharose and high safety, and having physiological and physical properties equal to that of the conventional sweetening.

The sweetening is a compound with high glycosylation, which has more than one α bonding glucose residues to RAKANKA (fruit of Morordica grosvenori) glycoside, and the method of production for the compound with high glycosylation which contacts the RAKANKA glycoside with an alpha- glucan and a glycosyltransferase.
