Abstract:
PURPOSE: To obtain a raw egg with shell safely eatable as it is and suitable for various egg dishes by eliminating the harmful microorganisms in the albumen and yolk of a raw egg in a state enclosed with the shell.
CONSTITUTION: The raw egg with shell contains carbon dioxide gas absorbed at least in the albumen and is free from harmful microorganism in the albumen and the yolk. The raw egg with shell is produced by storing a raw egg with shell in a carbon dioxide gas atmosphere at 46-52°C for a prescribed period.
