Abstract:

PURPOSE: To obtain the titled gel having excellent texture, low sweetness and low calorie and suitable in syrup pickles, jelly cake, etc., by adding a specific reduced starch syrup to a cellulose gel obtained from an acetobacterium so as to adjust to prescribed viscosity.

CONSTITUTION: (A) Cellulose gel produced by a microbe such as the genus Acetobacster is cleaned to remove impurity and (B) reduced starch syrup obtained by subjecting corn starch, etc., to hydrolysis, reduction and gel filtration so as to give ≤40 average dextrin equivalent is added to the cleaned cellulose gel to provide the aimed gel having 3W100cp viscosity.
