Abstract:

PURPOSE: To obtain refrigerated bread dough more excellent than conventional dough, capable of providing bread having good quality and taste by pre- fermenting bread dough using a specific bread yeast and then refrigerating and storing the dough.
CONSTITUTION: Bread dough is pre-fermented using a yeast (e.g. Saccharomyces cerevisiae or Saccharomyces uvarum) belonging to the genus Saccharomyces, having low-temperature sensitivity and causing no lowering of fermentation force even after refrigeration storage and then stored at -5 to 15°C to provide the objective dough.
