Abstract:

PURPOSE: To provide a process for removing salt from fat globule skin substance in whey, a process for separating a fat composition, a process for separating fat and protein from the fat globule skin substance and a process for separating cholesterol, triglyceride and phospholipid from the fat globule skin substance.
CONSTITUTION: A salt of a bivalent cation is added to a whey containing a fat globule skin substance to obtain a coagulum containing the cation salt and the fat globule skin substance, the coagulum is adjusted to acidic state and the cation salt is separated from the coagulum by centrifugal separation or ultrafiltration to remove the cation salt from the fat globule skin substance in a whey. The desalted product is sterilized, pulverized and extracted with an organic solvent and/or supercritical gas to separate the fat component from the fat globule skin substance in whey. The desalted product is treated with a protease and protein from the fat globule skin substance in whey.
