Abstract:

PURPOSE: To obtain a cheese having any given shape and or an uneven pattern on the surface, by melting cheese under heating, plasticizing it, followed by molding it using a mold or mold frame.

CONSTITUTION: Cheese is blended with a mixture of a plastically adjusting substance, pH adjusting substance, seasoning substance, coloring matter, etc. or not blended with it, melted under heating at about 50W130°C, preferably 50W95°C, kneaded and made to flow to give a cheese having such a placiticity that it is preferably molded at 20W95°C. For example, fluid cheese is heated to about 84°C, casted to the split-cavity mold 1A of silicone, the cheese is cooled at about 10°C for 15min and taken out so that the molded cheese 3A is obtained.
