Abstract:
To provide resistant starch that does not cause decline of a flavor of food when added to the food and a production method thereof.SOLUTION: A supernatant liquid is obtained by suspending resistant starch in ultrapure water at 33% and followed by centrifugal separation at 2,000×g for 10 minutes. The supernatant liquid has an electric conductivity of less than 350 μS/cm. A production method of the resistant starch includes a step for mixing raw material starch and an acid so as to generate the resistant starch.SELECTED DRAWING: None
