Abstract:
PURPOSE: To obtain a retort packed food preventing shape collapse of solid material in distribution, readily edible by heating, by fixing a fluid food containing a soft solid material in an integrated way by using a specific fixing agent.
CONSTITUTION: An ingredient-containing food such as curry, pork soup or rice gruel comprising a liquid and soft solid materials is blended with one or more substances such as gelatin, collagen, agar whose aqueous solution have no fluidity at normal temperature but recover fluidity by heating during cooking or end of the cooking of the food and packed in retort by a conventional procedure.
