To provide a retorting tray by which the temperature of each retorted food can be quickly and evenly elevated by hot-water shower sterilization using a retort.
Side plates 12, 13 are placed upright on a bottom plate 11 perforated with numerous holes, and a bag storage part 15 serving as a space for storing a bag 1 having retorted food sealed therein is defined over the bottom plate 11. The bag storage part 15, although causing hot water received from above to flow down from the holes, allows the hot water to be temporarily retained and stored therein, thereby immersing each bag 1 in the hot water and quickly and evenly elevating the temperature of each bag 1. By interposing a support member between each bag 1 and the tray bottom plate 11, the hot water is made to enter between each bag 1 and the bottom plate 11 to promote the transfer of heat to the bottom of each bag 1 to elevate the temperature of each bag 1 more quickly and evenly.
