Abstract:
To obtain a rice cracker capable of clearly showing e.g. character(s), symbol(s) thereon without irregularities thereof when the cracker is thoroughly baked, and to provide a method for producing the rice cracker.
This rice cracker is characterized by being produced through applying a sauce comprising a gelatinizer, food defoaming agent, starch, saccharide and amino acid(s) onto a dough followed by baking up the resultant dough.
