Abstract:
PROBLEM TO BE SOLVED: To provide a breadmaking method in which not only excellent swelling in bread after burning, but also swelling in dough, is realized, and a rice flour composition and a producing method of a dough using product in which there is little time dependent change, such as caving, and which realizes more excellent breadmaking property.SOLUTION: There is provided a composition comprising rice flour containing rice as an ingredient, which is a breed or strain of any of listed as to : artificial crossing paddy rice breed "HANASAYAKA", rice of a breed or strain containing much pro-glutelin when compared with a standard rice within a breed or strain which is used as crossing parent of "HANASAYAKA" or any of ancestors thereof, any breed of strain "KURO 1900", strain "CHYUBO 59" (HU-Kei PL4), breed "HOKKAI PL3" (Cyuukan bo honnoh No. 8) or breed "Silewah" (Indonesian breed), rice of progeny breed or strain in which rice of or breed or strain is used in artificial crossing.SELECTED DRAWING: Figure 1
