Abstract:

PURPOSE: To produce a rice germ nutritive drink which has improved taste and is not taxing on the stomach without damaging its nutritive useful components, by decomposing and solubilizing solid content of rice germ powder by using an enzyme system such as an enzyme in malt, etc.

CONSTITUTION: Rice germ powder or gelatinized rice germ powder is mixed with malt powder and/or an enzyme derived from another matter. The blend is dispersed into water and heated in two stages at 30W50°C and then at 60W75°C.
