Abstract:
PURPOSE: To provide a rice-shaped low calory food having a close resemblance to rice in appearance and feeling in eating even at a smaller adding ratio of starch to glucomannan and excellent in freezing resistance.
CONSTITUTION: The rice-shaped low calory food consisting of an aqueous dispersion gel containing glucomannan, starch and food fiber as dispersoid. The food also contains a thickening polysaccharide consisting of an alginic acid and/or carrrageenan as dispersoid and a compounding ratio of starch is about 0.1-3 pts.wt. to 1 pts.wt of gluconannan.
