Abstract:

PROBLEM TO BE SOLVED: To obtain a food material having mellow sweetness, where excellent protein inherent in rice is fully utilized.
SOLUTION: The objective rice starch syrup, i.e., a food material having mellow sweetness and fully utilizing excellent protein inherent in rice, contains 0.2-5 wt.% of amino acids, 0.01-0.2 wt.% of minerals, and also 0.1-10 wt.% of glucose based on the total drained weight of the syrup, and has a degree of pigmentation of 0.001-5 defined by JAS, and is obtained by saccharifying a liquid obtained by liquefying polished rice or its ground product using β-amylase followed by making protease act on the saccharified liquid at pH 7.0 to 9.0.
