Abstract:

To provide a roast dextrin which has a dietary fiber content of ≥55%, preferably ≥60% and a whiteness of ≥60%.

The roast dextrin having a dietary fiber content of ≥55% and a whiteness of ≥60% is obtained through heat-treatment of starch. The preparation method of the roast dextrin comprises a step wherein the starch is treated at 130-170°C in the presence of an acid and subsequently cooled to ≤120°C within 30 min.
