Abstract:
PROBLEM TO BE SOLVED: To provide a roll-in oil-in-water type emulsion composition excellent in ductility during tucking in operation into dough when used by tucking in to pastry, of which a baked product has a swelling layer structure, no oiliness and moist texture.SOLUTION: There is provided a roll-in oil-in-water type emulsion composition containing oil and fat of 50 to 65 mass%, saccharide of 5 to 20 mass%, protein of 1 to 5 mass%, an emulsifier of 0.1 to 3.0 mass%, a thickened polysaccharide of 0.1 to 1.0 mass% and water of 7 to 26 mass% and having an oil and fat average particle diameter of 0.1 to 10 μm for solving the above problem.
