PURPOSE: To obtain a roll for noodle preparation capable of shortening boiling time by forming grooves having constant shape on outer face of the noodle simultaneously with the noodle preparation.

CONSTITUTION: In the objective roll for noodle preparation, a noodle band formed to a prescribed thickness and breadth is supplied between a pair of noodle preparation rolls having many slitting blades 3 placed at a prescribed interval to a rotation shaft 2 and the noodle band is slit to noodle lines having a constant breadth by the many slitting blades 3. The slitting blades are made to roll-like slitting blades 3 having a prescribed breadth, these roll-like slitting blades are placed at the gaps 4 having a breadth same as the slitting blades to the rotation shaft, a groove-giving blade 5 forming a groove to the noodle line is fitted in each gap to construct the noodle preparing roll. A pair of noodle preparing rolls are placed wherein each roll-like slitting blade of one noodle preparing roll is opposed to each gap of the other roll and outer peripheries of both noodle preparing rolls are just touched with each other.
