Abstract:
To provide a novel S-glycoside that has sustained release properties and high fragrance-retaining properties and provide perfume, food products and cosmetics including the S-glycoside.
The objective S-glycoside is prepared by allowing a saccharide to glycoside-bond to a thiol having a fragrance. In more detail, a saccharide is glycoside-bonded to a thiol that is represented by the general formula: R-SH (R is an alkyl, an alkenyl, an alkadienyl each of which may be substituted, or an aryl group which may bear substituents) is to give the objective S- glycoside. The perfumes contain the S-glycoside, and are contained in food products or cosmetics.
