Abstract:
PROBLEM TO BE SOLVED: To produce a dried salmon meat sheet having texture and flavor originally suitable for food even from female salmon just after egg-laying especially weakening meat quality fibers, losing original color tone or taste components and lacking taste or flavor original for salmon.
SOLUTION: By performing dehydrating treatment to minced salmon meat solving out water-soluble protein through exposure in water, dehydrated minced meat containing salt-soluble protein but not containing water-soluble protein is provided. By adding salt and pure water to that dehydrated minced meat, adding seasonings and coloring agents and performing rubbing with salt and seasoning into paste state in which meat quality fibers can not be visually confirmed at least, paste-state salt-rubbed/seasoned meat solving one part of salt-soluble protein is provided. That salt-rubbed/seasoned meat is drawn and molded into the salmon meat sheet having required size and form, that sheet is finished by drying and the dried salmon meat sheet can be produced.
