PURPOSE: To obtain a salt-resistant respiration deficiency yeast suitable for producing salt-containing fermented seasoned food, comprising a specific enzyme belonging to Zygosaccharomyces rouxii as a component.
CONSTITUTION: A salt-resistant respiration deficiency yeast which belongs Zygosaccharomyces rouxii and is deficient in respiration oxygen. The salt- resistant respiration deficiency yeast is obtained by varying Zygosaccharomyces rouxii with ethidium bromide and separating a strain which is multiplied in a medium containing glucose but not multiplied in a medium containing glycerin but not glucose. The salt-resistant respiration deficiency yeast is deficient in respiration oxygen, maintains life by fermentation and is useful for producing salt-containing fermented seasoned foods because of possession of salt resistance. When the salt-containing fermented seasoned foods are produced by using the yeast, high-quality fermented seasoned foods can be efficiently produced because production of alcohol is large and fermentation ratio is high.
