Abstract:

PURPOSE: To obtain a salty seasoning capable of extending a discolor and decolor-preventing period of a food without loosing saltiness of the seasoning, and accordingly, useful for hypochlorization by compounding sodium chloride with a specific amount of kojic acid.

CONSTITUTION: This salty seasoning is composed of (A) 100 pts.wt. of sodium chloride and (B) 1.0-20 pts.wt. of kojic acid as main components. The seasoning has a discolor and decolor-preventing effect without loosing the saltiness and taste characteristic to table salt, and can reduce the adding amount of sodium chloride for food preservation.
